Dive in to the delicious cacao cashew ice cream! Simple to make and made from even easier to devour, these choc-ice like ice creams will be a favourite of kids and adults alike.
Ingredients:
- 100g cashew nuts
- 1 can of coconut cream
- 1 banana
- 4 tbsp maple syrup
- 1 60g pitch dark chocolate bar
Instructions:
The ice cream:
1- Blend the cashew nuts, coconut cream, banana and maple syrup until smooth.
2- Pour the mixture into ice lolly moulds and freeze overnight.
The chocolate coating:
1- Break up a bar of dark chocolate
2- Place in a bowl and put the bowl over a small pan of water.
3- Gently heat the water while continuously stirring the chocolate.
4- When the chocolate is smooth, remove from the heat and leave to cool for 5 minutes.
5- Dip the frozen lollies into the chocolate and decorate with dried berries or cashews
6- Place back into the freezer for 30 minutes.
