Matcha Coconut Vegan Ice-cream
with a dark mint chocolate shell

Vegan Matcha Coconut ice cream with a dark, crisp minty raw chocolate shell! What's not to love on a hot Summer's day?
2 frozen bananas
1 tin coconut milk
2 tsp matcha green tea powder
1. Blend all ingredients together until completely fully combined. Smooth mixture into a bowl or dish and place in the freezer for two hours.
2. Mix well with a spoon then return to the freezer overnight or for at least 4 hours to freeze fully before serving.
3. We like to serve ours with a dark chocolate shell - simply melt dark mint
chocolate using the Bain Marie method and drizzle over the ice cream. The chocolate will set almost instantly, giving a wonderful, chocolate-y snap to your bowl!
