raw chocolate hazelnut truffles

We're just nuts about this recipe for chocolate hazelnut truffles! It's basically a healthier, DIY version of Ferrero Rochers!  So we'll call them Ferrero Rawchers, since they're enrobed in a crisp Raw Chocolate shell.  The choice is your to make the shell with pure dark raw chocolate, or lighten it up by mixing in some Vanoffee if you have more of a sweet tooth!

Ingredients (makes 12 truffles):
100g toasted hazelnuts
60g maple syrup
40g cacao butter
2 tbs cacao powder
1/2 tsp vanilla extract or vanilla powder
Pinch of salt
3 x 38g bars of Raw Chocolate (combination of Vanoffee & Pitch Dark 72%, or just Pitch Dark if you like your chocolate dark!)
12 whole hazelnuts
50g finely chopped hazelnuts to roll in

Toast 100g hazelnuts in the oven for 5 minutes at 200c.
Let the hazelnuts cool.
Meanwhile melt the cacao butter in a saucepan over medium heat.
Add toasted hazelnuts and cacao butter to a blender with the remaining ingredients and blend till smooth.
Let the mixture sit in the fridge for 15 minutes.
Take the mixture out and form into 12 small balls.
Flatten the balls, add a hazelnut in the middle and roll to a ball again to cover the hazelnut.
Gently melt the raw chocolate bars in a heat-safe bowl over a steaming pan of water (bain-marie).
Coat the balls with the chocolate and roll in chopped hazelnuts.
Let the truffles sit in the fridge for chocolate to harden before enjoying with delight!
