Cherry Rocky Road

This is a delicious recipe that is packed full of chocolatey goodness!  The Vanoffee works so well with the combination of Pitch Dark, creating a really indulgent treat.  The burst of sour cherries and the crunch from the fava beans makes this a really delicious twist on a classic rocky road.

Ingredients:     
Makes 12 bites

25g Cacao Butter
2x bars of  Pitch Dark 72% Dark Chocolate,  broken into rough chunks
1x  38g Vanoffee bar, broken into rough chunks
1 tbsp Maple Syrup
20g Coconut oil
60g  Chocolate Fava Beans
60g  Chocolate Sour cherries
50g  Mulberries
50g toasted pecan nuts, chopped    
(you could use toasted     
sunflower seeds, if allergic to nuts)
20g desiccated coconut

12 fresh cherries to finish

To Decorate:
1x 38g Vanoffee bar

Method:
Line a 20 x 20cm baking  tray with parchment paper.
Add about an inch of boiling water into a saucepan and place over a medium heat
Add the cacao butter and the dark chocolate to a medium size glass bowl (something that will sit nicely over your saucepan, but isn’t so small that it touches the water). Sit the glass bowl on top of the saucepan, to create a double boiler. Let the Cacao butter and chocolate melt, stirring occasional with a spatula or spoon.
Once roughly half of the cacao butter and dark chocolate has melted, add 1 bar of broken up Vanoffee.  Continue to stir until you only have a few lumps of chocolate left.
Take the glass bowl off the heat, give it a good stir to melt the remaining lumps of chocolate, then stir in the maple syrup and coconut oil.    
Mix in the fava beans, chocolate cherries, mulberries, pecan nuts & desiccated coconut.  Pour into your lined tin and spread out using the back of a spoon, making sure it is evenly spread out across the whole tray.   
Add the fresh cherries to the top, pushing them into the rocky road slightly, so they set into the chocolate.
Pop into the fridge for 1 - 2 hours to set    

Once firm, take out of the fridge and melt the remaining bar of Vanoffee, then drizzle over the rocky road.

Place back in the fridge, until completely set, before chopping into pieces to serve. Enjoy!
