Easter Cookie Nests

This is a super fun recipe for you that is totally in keeping with the theme of Easter! How could you not smile at these cute little easter egg cookie nests filled with raw chocolate and topped with chocolate almond*eggs*….

Completely vegan, gluten and refined sugar free, a great baking activity that the whole family can enjoy!  :)

Makes 8

Ingredients:

120g full fat coconut milk

100g dessicated coconut

2 Tbsp coconut sugar

2 Tbsp maple syrup

35g buckwheat flour (or other gluten free flour)

 

20g Vanoffee buttons & 20g Pitch Dark 72%  buttons

 

Raw Chocolate Almonds (110g pouch)

Goji Berries

 

Instructions:

 

Preheat oven to 190 degrees celsius.

Mix all ingredients except chocolate, almonds and goji berries,in a large mixing bowl.

Make 8 balls out of the mixture.

Use your thumb to create a dent in the middle of each ball to create a nest.

Line a baking tray with parchment paper.

Add nests to baking tray and bake in the oven for 12-13 minutes.

Let the nests cool.

Melt the chocolate and add to the dents.

Top with chocolate almonds (eggs!) and goji berries.

Let the chocolate harden before enjoying
